Hario Switch: the 2026 champion's recipe.

Nas Jaafar from Malaysia won the World Brewers Cup in Brussels in June 2026 with a Switch: first an open pour, then one minute with the valve shut, then open again. 15 g of coffee, 200 g of water, done at 2:10. Next to it is La Cabra's Switch recipe from Copenhagen, which starts with the valve shut. Both with a timer that tells you when to pour and when to flip the valve.

What the valve does

The Switch is a V60 cone on a base with a small ball valve. With the valve open, water runs through like a normal pour-over. Shut it, and coffee and water steep together like in a French press. You decide in which order.

Starting open is meant to give the cup clarity, the minute with the valve shut sweetness and body. La Cabra starts closed instead: the bloom sits in the water, then everything runs through. Hybrid brewers like this are back in competitions: according to Perfect Daily Grind, four of the nine finalists at the 2025 World Brewers Cup used one.

Before you start

Heat the water. Put a paper filter in the Switch, rinse it with hot water with the valve open and pour the rinse water away. Grind 15 g of coffee and put it in the filter. Check which way the valve is set for the first step, put everything on the scale and tare it to zero.

What you need

  • Hario Switch with a paper filter. Nas Jaafar put a flatter UFO dripper on the Switch base. We wrote the recipe down for the normal Switch cone, so your times can shift noticeably.
  • Soft water: he brewed with water at 50 ppm. A jug filter gets you closer than hard tap water.
  • Scale that weighs in 1 g steps, and a kettle
  • Grinder: a burr grinder gives the most even grind

Step by step

Champion 2026: 15 g of coffee, 200 g of water

  1. 0:00

    Pour to 100 g

Valve open. Start the timer and pour 100 g in slow circles. Let it run through like a pour-over.

  2. 0:58

    Close the valve

Close the Switch. From here on the water stays in the cone.

  3. 1:00

    Pour to 200 g

Pour the rest, up to 200 g. Now coffee and water steep together, like in a French press.

  4. 2:00

    Open the valve

Open the Switch and let it all run through. In the final, with the flat UFO cone, it took about 10 seconds. The normal Switch takes longer.

  5. 2:10

    Done

Done at about 2:10. Still dripping a minute later? Grind a little coarser next time.

La Cabra: 15 g of coffee, 250 g of water

  1. 0:00

    Bloom with 60 g

Valve closed. Start the timer and pour 60 g. Nothing drips through yet: the coffee blooms in the water.

  2. 0:45

    Open, pour to 250 g

Open the Switch and pour the rest up to 250 g straight away, in calm circles.

  3. 2:00

    Done

It should be through at about 2:00. Much later: grind coarser next time.

Where the recipes come from: the result of the final is on World Coffee Championships, the recipe from a transcript of his routine from 27 June 2026. His coffee was an anaerobic natural Geisha from Finca Nuguo in Panama. La Cabra publishes its recipe in its brew guide.

FAQ

What was the winning recipe of the 2026 World Brewers Cup?

Nas Jaafar brewed 15 g of coffee with 200 g of water at 92 °C, ground to about 700 µm. He poured 100 g with the valve open and let it run through, shut the valve at 0:58, poured the other 100 g at 1:00, opened it again at 2:00 and was done at 2:10.

Do I need the UFO dripper?

No. The order of open and closed is what makes the recipe, and the normal Switch cone does that. If it runs much slower, grind a little coarser.

Can I brew a normal V60 recipe in the Switch?

Yes. Leave the valve open the whole time and it brews like a V60, for example with James Hoffmann's 1-cup technique.

Hario Switch or Clever Dripper?

Both have a valve. The Clever opens when you set it on a cup, the Switch has a lever, so you can open and close it while it sits on the carafe. That is what the champion recipe needs.
